Eliche, also known as “fusilli”, are a type of pasta widespread throughout Italy and particularly appreciated for their helical shape and their simple and versatile taste. Their precise origins are lost in time, even if their birth is generally placed in Sicily between the 12th and 13th centuries. It is assumed that their helical shape derives from the use of a metal wire, hence the name “maccheroni al ferretto”. Their history and their peculiar characteristics make them an iconic element of the Italian culinary tradition.
